One of the biggest issues you will have with pre-planning is that it is not possible to pre-book train/bus tickets prior to leaving. This can cause issues if these get sold out, so try and be a bit flexible in when/where you want to go.

One of the main issues you will have is if you want to get out of the big cities and see some of the real China, dealing with language issues and arranging travel can be problematic. There are some amazing, clean, pollution-free areas in China.
